What to do with fresh strawberries...

STRAWBERRY ALMOND MUFFINS

  • 1/2 cup butter or margarine
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup milk or orange juice
  • 1 1/2 tsp almond extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 2 cups fresh strawberries, sliced
  • 3/4 c. sliced or slivered almonds
  • Preheat oven to 375 degrees and line a muffin tin with 12 paper muffin cup liners. Melt butter. Mix in sugar, eggs, milk, and almond extract.

    In a separate bowl, sift together both flours, baking powder and salt. Add flour mixture to butter mixture. Blend until just combined. Gently fold in the almonds and strawberries.

    Bake for 30 minutes or until the tops of the muffins are lightly and evenly browned.

    Yield: 12 muffins
