Try garnishing this with a spoonful of hot, cooked rice and and a splash of feshly squeezed lime juice..

LENTIL SOUP

  • 1 cup lentils
  • 1 cup chopped green peppers
  • 1 cup sliced carrots
  • 1/2 cup chopped onion
  • 2 tsp. instant chicken bouillon granules
  • 1/2 tsp. sage, ground or crushed
  • 1/8 tsp. cayenne pepper, ground
  • 2 cloves garlic, minced
  • 1 tsp. salt
  • 6 oz. fully cooked smoked sausages, quartered lengthwise and then sliced

In a large pot, mix lentils, green pepper, carrots, onion, bouillon granules, sage, cayenne pepper, garlic, and 5 cups water. Bring to boil. Reduce heat and simmer for 25 minutes.

Add salt and smoked sausage. Simmer for 10 more minutes.

Yield: 5 servings
