At last. A cake that's not dry!!!
Preheat oven to 350 degrees. Beat together eggs and sugar. Add salt & oil, mixing well. Add the dry ingredients, a little at a time until combined.
In a large bowl, combine appples, cinnamon, sugar, jam and lemon juice. Mix well.
In greased 9x12 cake pan, put 1/2 of the batter. Spread with all of the apple filling. Cover with the remaining batter. Bake for 60 minutes.
Yield: 24 squares
