At last. A cake that's not dry!!!

PASSOVER RECIPE:     AUNT SARA'S APPLE CAKE

  • 6 eggs
  • 1 1/2 cups sugar
  • 1 cup oil
  • 1/2 tsp salt
  • 1 1/2 cups cake meal
  • 3/4 cup potato starch
  • 5 apples, sliced thin
  • 1 tsp. cinnamon
  • 1/2 cup sugar
  • 1/2 c. strawberry jam
  • 1 tsp lemon juice
  • Preheat oven to 350 degrees. Beat together eggs and sugar. Add salt & oil, mixing well. Add the dry ingredients, a little at a time until combined.

    In a large bowl, combine appples, cinnamon, sugar, jam and lemon juice. Mix well.

    In greased 9x12 cake pan, put 1/2 of the batter. Spread with all of the apple filling. Cover with the remaining batter. Bake for 60 minutes.

    Yield: 24 squares
