For a moist, tasty honey cake (bet you never knew there was such a thing!)...

CHOCOLATE CHIP HONEY CAKE

  • 1 cup vegetable oil
  • 1 cup sugar
  • 2/3 cup brown sugar
  • 1 cup honey
  • 1 tsp. vanilla
  • 4 eggs
  • 1/2 cup cocoa
  • 2 1/4 cups flour
  • 1/2 tsp. baking soda
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1 cup coffee
  • 1/3 cup slivered almonds
  • 1/2 cup chocolate chips

In a medium bowl, mix together oil, sugar, brown sugar, honey, vanilla, and eggs. In a large bowl, mix together cocoa, flour, baking soda, baking powder, salt and cinnamon. Make a well in the center of the dry ingredients. Mix the wet ingredients and the coffee into the dry ingredients. Add the chocolate chips. Stir well. Pour into a greased 9x12 cake pan and sprinkle the top with almond slivers. Bake ate 350 degrees for 50 minutes.
